Abstract

Introduction
Microorganisms are ubiquitous and so are found in diverse environments such as soil, water (freshwater, estuarine and marine) and food. Each of these environments have diverse flora of bacteria, fungi, protozoa and algae. These microorganisms participate in the recycling of organic and nitrogenous compound which is essential for the active growth of primary producers (green plants). Incidentally, the ability of these microorganisms to degrade complex organic materials make these same micro-organisms potent spoilage organisms if they are present in food.
